Salmon Patties
If you are looking for a quick way to prepare a delicious meal, you will appreciate this recipe. Salmon is a healthy choice anytime. Everyone will love these - even kids.
Drain most of the liquid from one 15 oz. can of pink salmon. Pour contents into medium sized mixing bowl and remove as much of the skin as you can. Leave the bones if you like - this is a good source of calcium and you probably won't notice them in the finished patties.
Add and mix well:
- 1 egg
- 1/2 cup milk, canned milk or sour cream
- 1/4 cup lemon or lime juice
- 1/2 teaspoon onion powder or 1 Tablespoon grated onion
- 1 teaspoon seasoning salt
- 1 1/2 cups crushed cracker crumbs
- a little extra salt and pepper
Let set for 10 minutes to allow the liquid to be absorbed. Spoon mixture into a well greased fry pan to form patties. Use your spoon to make them round and even. Let brown on medium low heat (depending on your pan) until brown. Be sure they are heated through and firm enough to turn over. Turn and brown on other side. Serve with extra lemon or lime juice.
