Peanut Butter Chocolate Chip Cookie Bites

This recipe is for all the peanut-chocolate lovers. These cookie bites are very moist and  tender and have just the right combination of peanut-butter & chocolate. They have less sugar and are not oily. Great for any occasion!  






Cream together in mixing bowl:
  • 1/2 cup soft butter (1 stick)
  • 1/2 cup peanut butter
  • 2 eggs
  • 3/4 cup brown sugar (packed)
Add and mix a few seconds:
  • 1 Tablespoons water
  • 1 teaspoon vanilla
Add and mix just until blended well:
  • 2 cups all purpose white flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
Add 1 cup or more chocolate chips - mix until evenly mixed. 

Form in balls by hand or with medium cookie scoop and place on cookie sheet or stoneware. Bake at 350 degrees for approximately 12 minutes (depending on oven) or until they just start to turn brown.

This recipe makes approximately 2 dozen cookies.  Enjoy!

Power sources are limited only by your imagination. One popular approach is adapting a standard or exercise bike so you can use leg power rather than arm power. Best Banana Bread

This recipe has been around for a long time. I have tried lots of different Banana Bread recipes but to me this is the best one. It comes from a Betty Crocker recipe book so I must give credit where credit is due. Try it and see if you don't agree that this is the Best!




Preheat oven to 325 degrees. Lower the top shelf in the oven to allow the loaves to be in the center of oven. Grease loaf pans with butter, shortening or non-stick spray. Also - dusting them with flour will help loaves to release easier. This recipe makes 1 large loaf or 2 smaller medium loaves. 

Mix together in medium sized mixing bow until light and fluffy - about 30 seconds: 
  • 1 1/4 cups sugar
  • 1/2 cup (or stick) of butter or margarine - softened
  • 2 large eggs
Add and mix until blended:
  • 1/2 cup buttermilk
  • 1  1/2 cups mashed ripe bananas ( 3 to 4 medium)
  • 1 teaspoon vanilla
Stir in just until moistened evenly - don't over mix:
  • 2  1/2  cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chopped nuts - optional
Pour into prepared pans. If you place them on a bright cookie sheet to bake they won't get too brown on the bottom



Bake  70 minutes (or more) for medium sized loaves, or until a toothpick inserted in center comes out clean. Larger loaves will take 5 - 10 minutes longer.  Let cool for 10 minutes and then turn out on wire rack to finish cooling.  Cool completely before slicing.  Enjoy!

Note: If you double the batch you will have 3 nice sized medium loaves - one to keep, one to freeze and one to give away  :-)

Health Benefits of Fresh Ground Flour



For those of you who are interested in improving your health and having more nutritious and better tasting breads, baked goods and other foods, this article will help you have a better understanding of the importance of fresh ground flour from whole grains.


 White flour that most everyone uses for baking lacks the germ that contains  most of the nutrition in whole grain berries. If you have never tasted the difference in baked goods and other foods that have been made with flour as soon as it comes from the mill, you are in for a great surprise. Not only is the flavor better, the moisture is too. You will notice a big difference when  using fresh ground corn meal in your corn bread. It will be light and fluffy and not dry – much easier to swallow.

Many of the new grain mills are capable of producing a really fine flour that can be used just like white refined flour. You will notice some difference but the added flavor will make up for it. Even if you need to use a combination of white and whole grain flour to get the results you like, that is better than all refined flour.
