Savory Oven Stew

Tired of bland tasting store bought soup and stew? Make your own delicious homemade stew that everyone will love and save $$$ too. No need to worry about eating preservatives and no MSG!! This is an easy recipe that you can fix ahead of time and all you need is some rolls or your favorite bread to go with it. This can also be prepared in a Dutch Oven for great outdoor cooking!   

                                                    

Brown in bottom of roaster (or fry-pan on stove top):

  • 2# of cubed stew meat in ¼ cup olive oil  (or hamburger – needs no oil )
  • 1 large onion - sliced or diced

(stir occasionally until well browned – browning isn't necessary but gives it more flavor)

Layer on top of meat in roaster, dutch oven or crockpot in this order:

  • 2 large stalks of celery – cut in bite sized pieces
  • 4 – 6 sliced carrots (enough to make a good layer)
  • 4 – 6 potatoes – diced or bite size. (This should be your biggest layer)

Mix together and pour over meat and vegetables:

  • 1 can tomato soup diluted with 1 cup water - make sure no MSG   (or use 2 cans of individual size V-8 Juice or make our homemade tomato soup and use some of it. http://thechefinyouandmore.blogspot.com/2014/01/deli-style-tomato-soup.html )
  • 2 Tablespoons tapioca, (used for a thickener)
  • 1 Tablespoon sugar
  • 1 Tablespoon salt
  • 1/2 teaspoons savor salt (or seasoning salt)
  • 1 teaspoon crushed garlic or garlic powder - use more to suit taste.
  • 1 1/2 teaspoons dried parsley flakes (or fresh parsley)
  • Pepper to suit your taste. 
DO NOT STIR !!

Cover and bake at 250 degrees for 5 hours (less time in the Dutch Oven). Stir and serve when done.

Note:  Good served with biscuits, fresh rolls or garlic bread.
