Grandma's Crunchy Carmel Corn

 
This is my kids and grand-kids all time favorite Carmel Corn.  
This recipe comes from my MIL (Mother In Law - Gladys).
If you are planning a fun New Years party ~ this is sure to be a big hit! 

* It is easy to make 
* Crunchy (won't stick to your teeth) 
* Makes a large batch and will keep for several days - (that is if you hide it from easy access!)

Preheat oven to 250 degrees.  Pop 8 quarts of popcorn. Pour into a large roaster or baking pan that has been brushed with butter or non-stick coating. (Separate unpopped hulls by scooping from the top) 
Bring to a boil in large saucepan:
1 cup butter (2 sticks)
2 cups sugar (brown sugar gives it a richer flavor) 
1/2 cup light or dark corn syrup
Stir and bring to a boil on medium heat, then let boil for 5 minutes. Add 1 teaspoon soda and 1 teaspoon vanilla. This mixture will foam when you add the soda - this is why you need a large saucepan. Pour mixture evenly over the popcorn and stir until coated evenly. Place roasting pan in oven for 1 hour stirring every 15 minutes. Add nuts the last 15 minutes if you like. Let cool for about 5 minutes. Spread out with a large spoon on waxed or parchment paper to finish cooling. Break in pieces when cool enough to touch. Be careful - don't touch while hot!    Enjoy  :-)
